Christmas Baking

I don’t know how you feel…..but we feel that this year has just flown by and we are at that time of year again…..CHRISTMAS BAKING, as of next month we will start baking “Stollen”

Stollen is a cake like fruit bread made with yeast, milk, butter and flour, different spices and lemon zest. Candied citrus peel, raisins, currants and whole almonds are soaked over night in rum and added to the risen dough before shaping them into the traditional loaf designed to symbolize the infant Jesus wrapped in swaddling clothes.

Stollen is like regular sweetened fruit bread. However, because it is slathered with melted unsalted butter and dusted with icing sugar as soon as it comes out of the oven, it results in a much better-keeping and moister product. The marzipan rope or dark chocolate in the middle is optional, we do recommend the chocolate.
